Today, I had the pleasure of sitting down with Jessica Mattison, Co-Owner of Mama Corie’s Confections, where they serve up your favorite desserts in a fun and unique way. I wanted to get the 4-1-1 on the latest dessert trend — the cake pop — and boy, did I!

BBS – LaShayla: Jessica, cake pops are such a cute idea! How did you get into making them?
Jessica: I started doing cake pops as a unique favor for a friend’s wedding. Her grandmother makes this delicious pound cake, but we wanted to put a fun spin on it. I like to experiment with different things, so I was up for the challenge. Today, we have the cake pop available in over 20 flavors!
BBS: What types of events do you typically make cake pops for?
Jessica: We can make cake pops for ANY event — weddings, birthday parties, baby showers, corporate events — and we also do seasonal cake pops. We have Christmas-themed ones, Halloween-themed ones, etc. They’re tasty, bite-sized, and fun, which makes them appropriate for any event or setting. We can even do customized cake pops where we implement different shapes, designs, and colors.
BBS: Do you have any dessert available for someone who likes the cake pop idea but doesn’t necessarily want the stick itself attached?
Jessica: Absolutely! We also have “baby pops,” which are about half the size of a cake pop and comes without a stick. I think it’s a more elegant way to incorporate cake bites into an event. They look like truffles, but they’re cake!
We also do traditional cakes and can do have individual desserts like “pie in a jar,” for those that prefer pie over cake.
In addition to that, I’m currently working to perfect the “pie pop.”
BBS: Wow – that sounds pretty interesting! So, how do you distinguish your company from other companies who may also have cake pops?
Jessica: Cake pops are the trend right now, but ours are different because they’re authentic. All of our cakes are made from scratch and formed, dipped, decorated, and packaged by hand. A lot of love goes into each individual item.
I LOVE the idea of cake pops and think they’re so fitting for many different event ideas. Not only do they look amazing, they TASTE amazing. My favorite flavors are “Gommy, Gommy, Go Gommy,” “Lotta Lemon,” and “Turtle-ific.”
